Understanding Dovetail: Tagging Insights in Uploaded Documents

Hi, I have a basic question on how should I use dovetail. If understand well the core action is to tag bit of information in any uploaded documents to link these info to insights, is this correct?

    I’m asking this is because I found the process of manual tagging information very time consuming and wanted to know if you know a better way to do it?
