Frustrations with Text Editing in Insights: Seeking Solutions

Having to click escape to deselect text. After highlight a block of text, I would expect clicking anywhere outside of the highlighted area would un-highlight the text. Literally every word processing software works like this. But with Dovetail lately (long time user, coming back after a starting a new job, hi y'all), it just does not work like I expect, and I have to click escape? This just feels weird. Not sure if it's a bug, if it's intended, but it is driving me nuts. (See clip)

Selecting the entire word when I just want the first letter of a word highlighted. I'm trying to edit a sentence by highlighting and deleting the first few words. If I do a Command+Shift+Left Arrow it does exactly what I want it to. However, if I drag the cursor to highlight the text, it highlights the entire word instead of just the first letter of the word (see attached clip). I've been editing documents for years, I do this stuff on autopilot, so when stuff doesn't work the way it does everywhere else (strongly inherited mental model), I feel like I'm having a stroke or something.
