I think when you delete a tag it will leave the highlight as that untagged purple highlight assuming other tags weren't also assigned

Maybe a workaround to avoid losing track is to make a placeholder tag you merge all the other tags you want to delete into so you can then audit that rather than having to open a million data pages or projects
